চিকেন ঝুরা কাবাব
উপকরণ
১. মুরগির বুকের মাংস (টুকরো করে কাটা) – দুই কাপ
২. তান্দুরি মসলা- ১ টেবিল চামচ প্যাকেট
৩. ধনে গুড়া- ১ টেবিল চামচ
৪. জিরা গুড়া- ১ টেবিল চামচ
৫. শুকনা মরিচ গুড়া- ১ টেবিল চামচ
৫. গরম মসলা গুড়া – ১ টেবিল চামচ
৬. টক দই- ১ টেবিল চামচ
৭. সরিষার তেল- আধা কাপ
৮. ক্যাপসিকাম- সবুজ ১টি
৯. পিঁয়াজ (চার ফালি করে প্রতিটিকে খুলে ফেলো) ১/২টি
১০. পিঁয়াজ বাটা- ১ চা চামচ
১১. আদা বাটা- আধা চা চামচ
১২. রসুন বাটা- আধা চা চামচ
১৩. জাফরাণ গুড়া- সামান্য
১৪. পোস্ত বাটা- আধা চা চামচ
১৫. পেস্তা ও কাঠবাদাম বাটা- আধা চা চামচ
প্রণালী:
চিকেন টুকরা করে ভালমত পানি ঝরিয়ে তাতে ক্যাপসিকাপ, ফালি করা পিঁয়াজ ও তেল বাদে বাকি সব উপকরণ দিয়ে আধা ঘন্টা মেরিনেট কর। এবার প্যানে সামান্য করে তেল দিয়ে চিকেনের পিস্ গুলি পোঁড়া পোঁড়া করে ভেঁজে নাও। ভাঁজার সময় চিকেনের গায়ে থেকে ভালমত মেরিনেটের মসলা ছাড়িয়ে নেবে। সব চিকেন ভাঁজা হলে উক্ত প্যানে সরিষার তেল বাকিটুকু দিয়ে মেরিনেটের মসলা ঢেলে দাও। এবার ভালমত কষিয়ে তাতে সামান্য পানি দাও যাতে চিকেন সিদ্ধ হয়ে তেল উঠে যায়। মেরিনেট ও ভাঁজার জন্য চিকেন ইতিমধ্যেই বেশ খানিকটা সিদ্ধ হয়ে গেছে। তাই পানি কম দিতে হবে। বেশ কষা কষা হয়ে তেল উঠার একটু আগেই ক্যাপসিকাম ও ফালি করা পিঁয়াজ দিয়ে দাও। তেল উঠার জন্য আরো কিছুক্ষণ রেখে দাও চুলার উপর। পরোটা, তান্দুরি রুটি অথবা পোলাও এর সাথে জমবে ভাল চিকেন ঝুরা কাবাব।
